Every Thistleberry cake is personally designed and created from the first conversation to the final detail. I take on a limited number of commissions so that each celebration receives the attention it deserves.
The Craft
Years at the Bench, Not a Production Line
Thistleberry began with a fascination for the point where baking becomes design — the moment a cake stops being dessert and starts being part of the day itself. Years of commissions later, that's still the part I love: sketching, testing, building and finishing each cake by hand in my home-based workspace in Welwyn Garden City.
I work directly with every client. There's no design team to pass you along to and no template to choose from — just a conversation about your celebration, and a cake made to belong to it.
Because each commission takes time, only a limited number are accepted for any given date. It's the reason the work stays personal, and the reason dates for popular weekends go early.
In 2026, Thistleberry was named Best Bespoke Cake Studio – Hertfordshire in the Bake and Brew Awards, recognition of the care and craft behind the studio's made-to-order work.
